Eileen Elizabeth Beiersdorf

Eileen Elizabeth Beiersdorf, age 79, died Wednesday, August 25, 2021 in Mesquite, Nevada. She was born November 23, 1941 in Chicago, Illinois to William John and Adeline Mary Hlavac Schiffer. On September 2, 1961 she married Donald Frank Beiersdorf in Hinsdale, Illinois.

Eileen grew up in Hinsdale and met Donald at Drake University in Iowa. She enjoyed studying and learning. She attended four different colleges, after which, she eventually earned an Education Specialist degree. After earning her teaching license, she started her career in education teaching fourth graders before making the transition into administration, and ending her career as a school superintendent in Toppenish, WA. They raised their family in Denison, Iowa, retiring to Texas and finally to Mesquite in 2019. She took pleasure in playing bridge, participating in water aerobics, knitting and golfing.

Survivors include her husband, Donald of Mesquite; daughter, Beth (Jeff) Marchant of South Bend, IN; son, Robert (Lori Dishneau) of Castle Rock, CO; granddaughter, Hannah and brother, William (Misty) Schiffer of Frisco, TX.
